While the recipe is not really meant as a breakfast recipe, I found myself making this one Saturday morning. A Good Day to Bake is full of 70 sweet and savory baking recipes for any day of the week, led by flavor. Her writing is warm and unfussy, her flavour combinations creative without being too 'out there' and her methods well thought through and clearly explained.And, as accomplished and skilful as Ebeuhi is, the recipes in this book are accessible enough to allow those without her expertise to understand just how comforting and rewarding baking can be. They were not a hit with everyone--not everyone loves rosemary--but DIL and I really loved them, as did a couple of her friends. When the dough is puffed up and ready, a small round of dough is filled with grated halloumi, then rolled out into a 6" circle. While my husband and I loved the coffee glaze, the kids didn't like it (and they aren't picky, especially about sweet foods).

We can't make any promises, but Ebuehi certainly hopes this bread helps make nigella seeds an “it” ingredient: “They just bring such a unique flavor that I don't think can be replicated by anything else. Even as I finished writing that last paragraph, I think on all the other bready bakes I made from the book, and they are equally as good as the flatbreads. Spring is always associated with newness and blossoming, and so that's kind of the tie-in that I wanted to bring to that first chapter. They star flavors not usually used in bake goods, like tea, herbs, and less usual fruits and veggies, so tastes are new and even startling in a good way. The tag line is “Simple Baking Recipes for Every Mood,” and I have a lot of the ingredients on hand. It’s their very existence that serves to both satisfy the urge to bake, but also answer the question we find ourselves asking night after night: What should I make for dinner? Whether it was baking just to pass the time, baking with kids to keep them busy while home schooling, or providing homemade goodies to frontline workers, it was a sweet reminder of the way that food really does bring us together.

Once again, Benjamini’s talent and warmth shine through as she demonstrates that every day is a good day to bake (my motto!We have it all the time, and so I really wanted to include it in a way that was, I guess, different than the way that we grew up eating it or that my family would be used to having it and just showing its versatility and how much it can be used in so many different recipes. And just with the pressures of modern life, it's just so easy just to rush our way through all of that, and so just reminding ourselves to be present in moments of baking and cooking I think just allows us to appreciate things in such a different way. Although the subtitle of this book is “Simple Baking Recipes for Every Mood”, I’m not convinced that all are so simple.
